Pumpkin Bread
3 cups fresh steamed mash pumpkin or one large can pumpkin pie mix
4 1/2 cups sugar
1 1/2 cups vegetable oil
6 eggs, lightly beaten
5 cups all-purpose flour
3 teaspoons baking soda
3/4 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground nutmeg
2 1/4 teaspoons salt
1 1/2 cups cold water
1 cup nuts, optional
Mix all ingredients together. Bake at 325 °For 1 1/2 hours in a standard size loaf pans or 45 minutes for small pans. Let stand for 10 minutes in pans and then cool on the rack.
Yield: 3 to 4 standard loaf
